A perfect soup in summer and winter months.
You will need:
1 tub Dr Broth 750ml bone broth – any flavour you like
1 cup black beans – you must soak them overnight and strain
1 ½ tsp ground cumin
1 ½ tsp ground chilli powder
1 cup chopped tomatoes
Salt, pepper and 1 tbls extra virgin olive oil
juice of 1 lemon or 2 limes
In a medium saucepan over a medium heat, add your olive oil and stir in the black beans
Stir in your spices into the beans, then stir through the chopped tomatoes and add the broth.
Bring the beans to a simmer and gently simmer until they are soft. This could take 45mins to an hour (providing you soaked your beans overnight)
Keep stirring and checking the beans aren’t catching from time to time and add a little water if it’s reducing too much.
When the beans are soft, stir in the salt, pepper and lemon or lime juice, then carefully transfer a third of the soup to a blender. Blend until smooth then stir back into the beans.
Serve with some sour cream & salsa
