Enjoy this zingy and delicious low carb Tuscan soup
You will need:
1 Tub Dr Broth Roast Chicken Bone Broth
2 cups Italian sausage – casings removed and crumbled.
Pinch of chilli
Tsp dried oregano
½ cup chopped sundried tomatoes
Salt and pepper
2 cups baby spinach leaves
2 tbls grated parmesan
2 tbls chopped parsley
In a medium heavy bottomed saucepan on the stove, fry the crumbled sausage in a small splash of olive oil until golden brown – if a lot of fat has rendered out at this stage then spoon some of it out.
Add the chilli, oregano and sundried tomato and stir through.
Add the chopped tomatoes and a pinch of salt and a few twists of black pepper.
Add the Dr Broth chicken bone broth and bring to a simmer.
Simmer for about 15 minutes then stir in the spinach, parsley and Parmesan
